Black Locust Flower Syrup
4 cups black locust flowers, removed from stems
4 cups water
4 cups organic sugar
1 head of sumac berries.
Simmer flowers and sumac berries in water for 10 minutes. Strain and return to pot along with sugar. Bring back to a boil and simmer a few minutes. Can or store in refrigerator. Use on ice cream, pancakes or fritters. Blend with club soda for black locust flower soda or use in mixed drinks. To make black locust fritters, you can use any flower fritter recipe and substitute black locust flowers in place of dandelion or elderflowers in the recipe.
